This bell pepper sushi is a colorful and creative twist on traditional sushi rolls. The vibrant bell peppers add a sweet crunch, making it a refreshing and healthy option for sushi lovers.
Ingredients: 2 large bell peppers, any color. 1 cup sushi rice. 2 tablespoons rice vinegar. 1 tablespoon sugar. 1/2 teaspoon salt. 4 nori seaweed sheets. Assorted fillings e.g., cucumber, avocado, carrot, cooked shrimp. Soy sauce, for serving. Pickled ginger, for serving. Wasabi, for serving.
Instructions: Follow the directions on the package to cook the sushi rice. Mix rice vinegar, sugar, and salt in a small bowl until the sugar and salt are gone. Add this to the cooked rice and mix it in. Take out the seeds and membranes from the bell peppers and cut them into thin strips. On a bamboo sushi mat, put a sheet of nori. Spread a thin layer of ready-made sushi rice over the nori, leaving a top edge of about 1 inch. Place strips of bell pepper and any other fillings you like down the middle of the rice. Using the sushi mat, roll the nori tightly around the fillings. Use a little water to seal the edge. Do it again with the rest of the ingredients. Cut each roll into small pieces that you can easily eat. Soy sauce, pickled ginger, and wasabi should be served with it.
