Whizz beetroot into an easy batter to make these bright purple pancakes, then top with a warm fruit compote for a hearty weekend brunch. You can use this recipe to make blini-style canapés, too.
Made these this morning and they turned out pretty well. I didn’t get a picture worthy of Instagram unfortunately - two of the spotlights in my kitchen are down so the lighting is all wrong and there’s the small issue of my not having an Instagram account - but I’m gunna pop this here to say this is a good one: let’s do it again.
