I hardly ever bake but I had some beets to use up so I made beetroot cake for the first time. Used this recipe.
It pretty much tastes like carrot cake. It's a bit too sweet for me, I'd maybe put a quarter cup less sugar in the batter and add some other spice besides the cinnamon, like maybe allspice, and/or a quarter cup less icing sugar in the icing and add a pinch of salt and some lemon zest.
I ended up with 2 cups of grated beet (I had boiled them beforehand) so I made the 2x recipe. But I only made 1x the icing and only iced the outside. For between the two layers I used some homemade plum jam that I had (which cut down on the overall sweetness as well).
Is it healthy because it has beets in it??
Oh, also, if you think the icing looks lumpy, that's because it is. My electric hand mixer started struggling and I was worried it was going to burst into flames or something so I stopped and just did the best I could with a wooden spoon.
Oh, and also also, if you think the cakes look burnt, that's because they are. My oven is quite old and I always forget that it seems to run hotter than what I set it at. So I only had the batter in the oven for maybe 20 minutes max and it burnt like that.
