These Banana Bread Muffins are a delightful twist on traditional banana bread. They are moist, flavorful, and perfect for breakfast or as a snack.
Ingredients: 2 ripe bananas, mashed. 1/2 cup sugar. 1/4 cup melted butter. 1 egg. 1 tsp vanilla extract. 1 1/2 cups all-purpose flour. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1/2 tsp cinnamon. 1/4 tsp nutmeg. 1/2 cup chopped walnuts optional.
Instructions: Start by heating the oven to 350F 175C. Mash the bananas and add the sugar, melted butter, egg, and vanilla extract to a bowl. Mix the flour, baking soda, baking powder, salt, cinnamon, and nutmeg together in a different bowl using a whisk. Slowly add the dry ingredients to the banana mixture and mix them in until they are just combined. Fold the walnuts in if you're using them. Put paper liners in a muffin tin and fill each one about two thirds of the way to the top with batter. After the oven is hot, bake the muffins for 18 to 20 minutes, or until a toothpick inserted into the middle comes out clean. For a few minutes, let the muffins cool in the pan. Then, move them to a wire rack to cool completely.
