This Balsamic Steak and Peach Salad is a delightful combination of grilled sirloin steak, sweet peaches, and a tangy balsamic vinaigrette. It's a perfect summer salad that's both satisfying and refreshing.
Ingredients: 8 oz 225g sirloin steak. 2 ripe peaches, sliced. 4 cups mixed greens e.g., arugula, spinach, lettuce. 1/4 cup red onion, thinly sliced. 1/4 cup crumbled goat cheese. 1/4 cup chopped toasted pecans. 2 tablespoons olive oil. 2 tablespoons balsamic vinegar. 1 clove garlic, minced. Salt and pepper to taste.
Instructions: Season the sirloin steak with salt and pepper on both sides. In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, and a pinch of salt and pepper to create the dressing. Preheat a grill or grill pan over medium-high heat. Grill the steak for 4-5 minutes per side for medium-rare, or adjust cooking time to your desired level of doneness. Remove the steak from the grill and let it rest for a few minutes before slicing it thinly. In a large salad bowl, combine the mixed greens, sliced peaches, red onion, crumbled goat cheese, and toasted pecans. Drizzle the dressing over the salad and toss to coat the ingredients evenly.
