Instructions: Preheat the oven to 400F. 200 degrees C. Grease or line muffin cups with muffin liners. Combine the flour, sugar, salt, and baking powder in a medium-sized mixing bowl. Mix in the vegetable oil, egg, and milk until well combined. Fold in the blueberries, orange juice, and zest. Fill muffin cups two-thirds full with batter. 20-25 minutes, or until a toothpick inserted into the center comes out clean. Cool for 5 minutes in the pan before removing muffins to a wire rack to cool completely.

Ingredients: 1 cup unsalted butter, softened. 1 cup granulated sugar. 1 cup packed brown sugar. 2 large eggs. 1 teaspoon vanilla extract. 1 teaspoon peppermint extract. 3 cups all-purpose flour. 1 teaspoon baking soda. 1/2 teaspoon salt. 1 1/2 cups chocolate chips. 1/2 cup chopped fresh mint leaves.
Instructions: Preheat the oven to 375F 190C. Line baking sheets with parchment paper. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla extract and peppermint extract. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips and chopped fresh mint leaves. Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheets, leaving enough space between each cookie. Bake for 10-12 minutes or until the edges are golden brown. Remove from the oven and let the cookies cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
