You can make this low-carb beef and cauliflower "pasta" bake ahead of time and freeze it. The marinara sauce, cheesy cauliflower, and seasoned ground beef give it a lot of flavor. You can eat it any day of the week and feel good about it. It also freezes well, making it easy to reheat when you're busy.
Ingredients: 1 lb ground beef. 1 small onion, diced. 2 cloves garlic, minced. 1 cup marinara sauce. 1 head cauliflower, cut into florets. 1 cup shredded mozzarella cheese. 1/4 cup grated Parmesan cheese. Salt and pepper to taste. Fresh parsley, chopped, for garnish optional.
Instructions: Turn on your oven and heat it up to 375F 190C. Cook the ground beef in a pan over medium heat until it turns brown. Put in the minced garlic and diced onion and cook until the onions are soft. Add the marinara sauce and let it cook for 5 minutes. Add pepper and salt to taste. In the meantime, steam the cauliflower florets until they are just barely soft. Set aside and drain well. Spread out half of the cooked ground beef mixture on the bottom of a baking dish. The steamed cauliflower florets should be put on top of the beef mixture. Cover the cauliflower with the other half of the beef mixture. On top, put the grated Parmesan cheese and cut up mozzarella cheese. Put it in an oven that is already hot and bake for 20 to 25 minutes, or until the cheese melts and bubbles. If you want, you can add chopped fresh parsley as a garnish before serving. Let it cool a bit before cutting it up and serving it. Have fun!
