Plantain frittata anyone?🙋🏾♀️😋 Most of this dish is just plain old eggs and veggies. But the spread of plantain gives the illusion of having a lot of it! Feast with your eyes first - is my one sure way of making sure I don't overeat my fave foods. In this case dodo*! *Dodo is fried plantain in Yoruba. The one pictured was baked. Yummy either way.
