Monday 18th of august was Sandrineâs birthday so we were looking for a great cake recipe with fresh fruits like berries and a cream frosting. And we found this amazing one.
The idea of brown butter (that we have never heard of before) in addition to blueberries and blackberries convinced us right away. However, we didnât make a vanilla/poppy seeds glaze but a cream cheese frosting.Â
So this is how we dit it.
Prep time: 30 mn - Baking time: 50 mn
Ingredients:
For the cake:
21/2 cup whole wheat flour
1Â 1/2 cup golden yellow sugar
3/4 cup unsalted butter
4 eggs, room temperature
1Â 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1/2 tsp four spices mix
2 tbsp milk
10 oz blueberriesÂ
8 oz blackberries
For the frosting:
1 package of cream cheese (~8 oz)
4 tbsp of caster or icing sugar
2 tbsp milk
1/2 lemon juice or vanilla extract or seeds (the best)
1. Preheat oven at 350°F. In a frying pan, heat the butter on medium heat and let it cook until it begins to foam. Watch it out carefully and check regularly the color that will change. Once it becomes golden brown and smells like toffee, take it off of the heat and set aside.
2. In a bowl, mix together all dry ingredients: flour, baking powder, baking soda, salt, four spices.
3. In another bowl, beat the sugar and the butter. For this step, you can use an electric hand mixer but it is ok if you donât have one, just use you muscles ;) Then add the eggs one by one. And then, the milk. Mix until well combined.
4. Add progressively the flour mix to the batter, if you can sift it would be much better! Add finally the blue and blackberries (keep some to garnish) and mix carefully or you will smash the fruits.
5. Pour the batter into two greased 8â pans. We did not have two pans of the same size but we thought it was cute to have one smaller tu put it on the top of the other. Let it bake for about 50 minutes (depends on your oven and the size of the cake) until an inserted knifepoint comes out clean.
6. Let them cool for a while then remove them from their pans. Whisk the cream cheese, sugar, milk and lemon juice and spread it on the first cake, put the other one on the top and spread the rest of the frosting. Garnish with the berries that are left. Refrigerate for at least 1/2 to 1 hour or more.
All we can say is that we really liked this cake. The brown butter was a great discovery and with the spices, it tasted a bit like gingerbread but with some extra berries! Also, we only had whole wheat flour so we found it a little dry but surely more consistent. The cream cheese frosting was still good but we so would have tried the original glaze like in Adventures in Cooking recipe.
Probably next time because it is the kind of cake that is so tasty and so easy to make that you can not do it just once!
