Alright dash I am trying this recipe for strawberry shortcake to bring to dinner tomorrow! But! Despite enjoying baking, I've never made sponge cake and am missing several supplies (for example: no in person store had an offset spatula and nowhere online could deliver one in time 💀).

Got woken at 4am courtesy of Joey + had a Costco trip that make me feel murderous + shattered my pourover carafe while washing it BUT these pancakes went hard
Slept all of four hours but I woke up so content today? Joey didn't even scream at me; he was just sitting in the bedroom window watching the sunrise (adorable) and then shook his tail and trilled when I woke up on my own. 🥹 Everybody come over for coffee and açai bowls with homemade granola! It's gonna be a good day 🫶🏼

Prepping toppings for veg ramen tomorrow I'm so exciteddddd
Okay actual progress pic. I'm still rusty and they'll look better once filled, but so far the shells are passable! Plan is to make 1-2 more batches tonight and then fill em Wednesday night so they'll be optimally matured for Thursday. It'll be a mix of espresso shells with dairy free dark chocolate espresso ganache (tan), plain shells with strawberry jam and vanilla buttercream (pink), and ube shells with ube filling tbd (gonna see if I can swing another dairy free filling w ube halaya and coconut cream). If they're not happy with that then it isn't my problem bc this is masochistically high effort lmao.
Will probably also bake dark chocolate biscotti + nab some high quality coffee as a supplement for the people who can have that. 😮💨 Thank all of you beautiful people who sat with me through my initial crash out... after whining I was able to lock in 🖤
