Any pet Gabe has is probably very independent. Like, I don't think Gabe would neglect them, but definitely keeps himself too busy to properly take care of a dog. He does spoil his old alley cat so much, though. Only The Best. Meanwhile, Jack would have wanted a dog, always had dogs growing up, but saw this big, innocent eyed kitty and had to take it home. He still raises it a bit like a dog and the kitty is just fine with that. It even plays fetch.

Looking at all the character models and the weird size differences, I want to assume it is all to do with hitboxes... The tanks need to be big to block damage and be imposing forces. The healers need to be smol and hard to hit. My other theory is that Jeff Kaplan is secretly a god of chaos and refused to give the model makers size charts for references so he can feed off of our confusion.
