Delicious and moist apple strudel muffins with a cinnamon streusel topping. Perfect for breakfast or as a snack with a cup of tea or coffee!
Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup granulated sugar. 1/2 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 1/4 cup unsalted butter, melted. 1/2 cup applesauce. 1 egg. 1 teaspoon vanilla extract. 1 1/2 cups diced apples. 1/4 cup chopped walnuts optional. 1/4 cup raisins optional. For the streusel topping:. 1/4 cup all-purpose flour. 1/4 cup granulated sugar. 1/4 teaspoon ground cinnamon. 2 tablespoons unsalted butter, cold.
Instructions: Preheat your oven to 350F 175C. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. In a separate bowl, mix together the melted butter, applesauce, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the diced apples, walnuts, and raisins if desired. Scoop the batter into muffin cups, filling each about 2/3 full. To make the streusel topping, in a small bowl, combine the flour, sugar, and cinnamon. Cut in the cold butter until the mixture resembles coarse crumbs. Sprinkle the streusel topping over the muffin batter in each cup. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
