Hi! Thanks for asking. Its funny since I still think of myself as a "newbie" in a lot of ways since I just got into this whole mess of 12th Century England/France drama probably around like last December, so there are definitely lots of people who know more (ppl, feel free to suggest anything if I haven't mentioned it)
To my knowledge there aren't any specific books or sources that are just about their interactions (aside from That One Recent Fiction book that is. Well that's it's OWN thing lmao) but since the family affairs of the Angevin-Plantagenets and the French kings were very closely entwined with the rest of the family and various other parties, there's lots of overlap.
I personally love it because on one hand it's Free Soap Opera Entertainment, and on the other, a look at a time and environment that is very fascinating and extremely different than the time we live in now. Here I've listed the different books and video I've gotten around to, my thoughts on them, as well as some of my thoughts on uhhhh historical RPF shipping in general:

“The Lionheart‘s Sister’s Death”

What?: Many of you on history tumblr know the user @alicependragon73 that has been going around asking people to write her a fic about her and Lionheart AKA King Richard I of England. Well I was curious so I asked her what she had in mind given she was so persistent in asking people to write this for her.
She requested a self-insert(-ish) fic where she is Richard’s fourth fictional sister and she is imprisoned together with him by Leopold V Duke of Austria, and when it later becomes clear that only one can return to England the sister sacrifices herself and Richard will not live on much longer himself - also heavily suffering from the loss. The Requester gave me only two days to write this. Now all who know this blog know I’m no expert in Angevin history but I know enough so I decided to give it a whirl. Here it is - consider this our fandom gift hahaha.
Official Summary: In 1192 Richard I "Lionheart" King of England is not the only one of the Angevins imprisoned by Leopold V Duke of Austria on the way back from the Third Crusades. A fourth sister: Marilena, Dowager Queen of Portugal though non-existent in history is here with him and while the ransom raised may not be enough to regain him his freedom - perhaps her sacrifice is.
