Instructions: Preheat the oven to 325F 165C and line a baking sheet with parchment paper. In a mixing bowl, combine the sweetened shredded coconut, granulated sugar, vanilla extract, and pinch of salt. In a separate bowl, whisk the egg whites until they form stiff peaks. Gently fold the whipped egg whites into the coconut mixture until fully combined. Using a spoon or cookie scoop, drop small mounds of the mixture onto the prepared baking sheet. Bake in the preheated oven for about 15-18 minutes or until the macaroons turn golden brown around the edges. Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
