These Achiote Pork Chop Tacos are a delicious fusion of Mexican flavors. The pork chops are marinated in achiote paste and grilled to perfection, then served in warm corn tortillas with fresh toppings. They make a fantastic meal for any occasion!
Ingredients: 4 bone-in pork chops. 2 tablespoons achiote paste. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 teaspoon ground cumin. 1 teaspoon chili powder. Salt and pepper to taste. 8 small corn tortillas. 1 cup shredded lettuce. 1/2 cup diced tomatoes. 1/2 cup diced red onion. 1/4 cup chopped fresh cilantro. 1/4 cup crumbled queso fresco. Lime wedges for serving.
Instructions: Put garlic mince, ground cumin, chili powder, salt, and pepper in a bowl. Add the achiote paste and mix them all together. Mix well to make a sauce. Make sure the pork chops are well covered with the marinade by rubbing it all over them. For the best taste, cover and put in the fridge for at least two hours or overnight. Warm up a grill or grill pan over medium-high heat. Grill the pork chops with the marinade for four to five minutes on each side, or until they reach 145F 63C on the inside. After taking the pork chops off the grill, let them rest for a few minutes. Then, cut them into thin strips. For 20 to 30 seconds on each side, warm the corn tortillas on the grill. To make tacos, put some shredded lettuce and then sliced pork chops on each tortilla. Diced tomatoes, red onion, cilantro, and crumbled queso fresco should be put on top.
