Washing it before will take out any bitterness you might taste afterwards and also add salt while it cooks. Adding juices (lime/lemon) and seasonings mixed with diff veges (i.e. peppers, edamame, tomatoes) or fruits (i.e. cranberries, raisins, apples) also works.
In terms of a desi diet, I'd argue substituting quinoa over white rice or roti is a healthier option. You can add it to daals (lentils) and eat it with any vege or meat dishes. I think it's more of a mental adjustment to push for incorporating it more.
