Shredded Chicken Mole Nachos are a delightful twist on traditional nachos, featuring tender shredded chicken smothered in rich and flavorful mole sauce. These nachos are loaded with toppings, making them a crowd-pleasing appetizer or snack for any occasion.
Ingredients: 2 cups cooked shredded chicken. 1 cup mole sauce. 1 cup shredded cheese your choice. 1/2 cup black beans, drained and rinsed. 1/2 cup diced tomatoes. 1/4 cup diced red onion. 1/4 cup sliced black olives. 1/4 cup chopped cilantro. 1/4 cup sour cream. 1/4 cup guacamole. 1 bag of tortilla chips.
Instructions: Set the oven temperature to 175C 350F. Line a baking sheet with tortilla chips and spread them evenly. Warm the mole sauce in a saucepan over low heat until it's thoroughly heated. Over the tortilla chips, pour the warm mole sauce. Arrange the black beans, shredded cheese, and chicken evenly over the chips. Bake for ten to fifteen minutes, or until the cheese is bubbling and melted, in a preheated oven. After taking the nachos out of the oven, garnish them with chopped cilantro, sliced black olives, diced tomatoes, and diced red onion. Top with dollops of guacamole and sour cream and serve hot.
