Lime meltaways that are gluten-free and vegan, tangy and melt in your mouth. These zesty cookies are ideal for a light snack.
Ingredients: 1 cups almond flour. 2 tbsp arrowroot powder. 1/3 cup powdered sugar. 1/4 tsp salt. Zest of 2 limes. 3 tbsp coconut oil, melted. 2 tbsp lime juice. 1 tsp vanilla extract. Extra powdered sugar, for rolling.
Instructions: Put arrowroot powder, powdered sugar, salt, and almond flour in a bowl and mix them together. Melt the coconut oil and add it to the dry ingredients. Then add the lime juice and vanilla extract. Mix the dough until it holds together. Make a log out of the dough and cover it with plastic wrap. Put it in the fridge for about an hour. Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Before putting the rounds of chilled dough on the baking sheet, cut them into slices. For 8 to 10 minutes, or until the edges start to turn a little golden. For a few minutes, let the cookies cool on the baking sheet. Then, move them to a wire rack to cool completely. Once the cookies are cool enough to touch, coat them with powdered sugar. Put in a container that won't let air in.
