This Easy Beef and Broccoli Stir-Fry is a quick and healthy meal option that's perfect for those following a WeightWatchers plan. Packed with lean beef, vibrant vegetables, and a flavorful sauce, it's a satisfying and low-calorie choice for a balanced diet.
Ingredients: 1 lb lean beef, thinly sliced. 2 cups broccoli florets. 1 red bell pepper, thinly sliced. 1 onion, thinly sliced. 3 cloves garlic, minced. 1/4 cup low-sodium soy sauce. 2 tablespoons hoisin sauce. 1 tablespoon cornstarch. 1 tablespoon sesame oil. 1 teaspoon ginger, minced. 1/2 teaspoon red pepper flakes optional. Cooking spray. Salt and pepper to taste. Sesame seeds for garnish optional. Cooked brown rice for serving.
Instructions: To make the sauce, combine the soy sauce, hoisin sauce, cornstarch, and ginger in a small bowl. Put aside. Sesame oil should be heated over medium-high heat in a large skillet or wok. Stir-fry the beef slices until they are well cooked and browned. After taking the steak out of the skillet, set it aside. Add red pepper flakes if using and minced garlic to the skillet after sprinkling it with cooking spray. Stir-fry until fragrant, about 30 seconds. To the skillet, add the onion, red bell pepper, and broccoli. Stir-fry the vegetables for 34 minutes, or until they are crisp-tender. Place the cooked steak back into the skillet and cover the meat and veggies with the sauce. Stir-fry for a further two to three minutes, or until the sauce gets thicker and evenly coats everything. To taste, add salt and pepper for seasoning. Serve the stir-fried beef and broccoli over cooked brown rice, and if preferred, top with sesame seeds. Savor your delicious and nutritious stir-fry!
