These Honeydew Mojito Popsicles are a great way to cool off. Putting together sweet honeydew, sour lime, and fresh mint makes a delicious frozen treat that's great for hot summer days or any time you want something cool and tasty.
Ingredients: 1 ripe honeydew melon, diced. 1/4 cup fresh lime juice. 1/4 cup fresh mint leaves, chopped. 2 tbsp honey or agave syrup. 1/4 cup white rum optional.
Instructions: In a blender, combine diced honeydew melon, lime juice, mint leaves, and honey/agave syrup. Blend until smooth. If using, stir in white rum into the blended mixture. Pour the mixture into popsicle molds. Insert popsicle sticks into the molds. Freeze for at least 4 hours or until solid. To remove popsicles from molds, briefly run warm water over the outside of the molds to loosen.

Ingredients: 2 cups all-purpose flour. 1/2 cup warm water. 1 egg. 1/2 teaspoon salt. 1 cup shredded cheddar cheese. 1/2 cup diced onions. 2 tablespoons butter. Salt and pepper to taste. Sour cream and chives for serving optional.
Instructions: In a large mixing bowl, combine the flour and 1/2 teaspoon of salt. In a separate bowl, whisk together the warm water and egg. Slowly add the wet mixture to the dry mixture, stirring until a dough forms. Knead the dough on a floured surface for about 5 minutes, until it becomes smooth and elastic. Cover and let it rest for 30 minutes. While the dough is resting, melt the butter in a skillet over medium heat. Add the diced onions and saut until they become soft and translucent. Remove from heat and set aside. Roll out the dough on a floured surface to about 1/8-inch thickness. Using a round cutter or a glass, cut out circles from the dough. Place a spoonful of shredded cheddar cheese and a small amount of sauted onions in the center of each dough circle. Fold the dough over the filling to create a half-moon shape, then press the edges to seal. Bring a large pot of salted water to a boil. Carefully drop the pierogi into the boiling water and cook for about 2-3 minutes, or until they float to the surface. Remove the cooked pierogi with a slotted spoon and drain them on a paper towel. Optional: Saut the cooked pierogi in a skillet with butter until they become golden and crispy. Serve hot with sour cream and chives if desired. Enjoy your savory cheddar pierogi!

In a large mixing bowl, whisk together cornmeal, flour, baking powder, and salt. Add maple syrup, almond milk, melted coconut oil, and flaxseed mixture to the dry ingredients. Stir until just combined. Fold in diced jalapenos. Divide batter evenly among muffin cups, filling each about 3/4 full. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. Serve warm or at room temperature.

Ingredients: 1 lb ground chicken. 1/4 cup breadcrumbs. 1/4 cup finely chopped red onion. 2 cloves garlic, minced. 2 tbsp chopped cilantro. 1 tsp chipotle powder. 1/2 tsp cumin. Salt and pepper to taste. 4 burger buns. 4 slices pepper jack cheese. Lettuce leaves. Sliced tomatoes. Sliced red onion. Mayonnaise. Chipotle hot sauce.
Instructions: In a mixing bowl, combine ground chicken, breadcrumbs, red onion, minced garlic, cilantro, chipotle powder, cumin, salt, and pepper. Mix until well combined. Form the mixture into 4 burger patties. Preheat your grill or stovetop griddle over medium-high heat. Grill the burger patties for about 5-6 minutes per side or until they are cooked through and have nice grill marks. During the last minute of cooking, add a slice of pepper jack cheese on top of each patty and cover to melt. While the burgers are cooking, toast the burger buns on the grill until lightly browned. Assemble the burgers by spreading mayonnaise and chipotle hot sauce on the toasted buns. Place lettuce leaves, sliced tomatoes, and red onion on the bottom bun. Place the cooked chicken patty with melted cheese on top of the veggies, then top with the other half of the bun. Serve hot with your favorite side dishes. Enjoy!

Get a griddle or skillet that doesn't stick hot over medium heat and use cooking spray or butter to lightly coat it. For each pancake, put 1/4 cup of batter on the hot griddle. Once the top starts to bubble, flip it over and cook the other side until it's golden brown. Add maple syrup to the pancakes while they are still hot.
