Homemade Cuban fruit salad for my babies

Ingredients

* 2 ripe mangoes, diced

* 300 g (10 oz) strawberries, halved

* 1 small pineapple, diced

* 2 kiwis, sliced

* 1 passion fruit

* 1 banana, sliced (add last)

Dressing

* Juice and zest of 2 limes

* 2 tbsp honey

* 2 tbsp dark rum (optional)

* 1 tsp vanilla extract

* ½ tsp cinnamon

* Pinch of nutmeg

* Pinch of sea salt

Finish

* Fresh basil, chopped

* Toasted coconut flakes

* Chopped roasted cashews

* Crushed pink peppercorns

Instructions

1. Whisk together all the dressing ingredients.

2. Toss the mango, strawberries, pineapple, and kiwi with the dressing.

3. Chill for 30–60 minutes.

4. Just before serving, add the banana, passion fruit, basil, toasted coconut, and cashews.
