Soft opening night one

Put the pickles on the cheese board. A simple task in theory with very little that can go wrong. 10 hours into cleaning up from a fry cook that had no place menu writing or testing. Nothing is going to surprise me. Putting eyes on the pickles as I walk into the building, nothing is off. I set up my chemicals that were delivered as an emergency to run a soft opening. I get back to the pickles I pick up a slightly bulging bucket with some food stain on the front. There is no plastic ring under the lips of the bucket. Check the side, “keep refrigerated” screams at me. I proceed to open the bucket, looking back I didn’t need to it had been there for a minimum 5 days in it’s current state. The mass produced 5 gallon Sysco brond pickles don’t look right. They are paler than normal with an odd fragrance to them.

I eat the pickle, if I’m supposed to serve the pickle I will try it. Soft opening endes early because the pickle has a foodborne illness.
