Sending lots of love, Mei ♥️⁣ ⁣ Ingredients ⁣ 70g sugar ⁣ 2 tbsp corn syrup or glucose syrup *40g ⁣ 1 ½ tbsp water *20g ⁣ ½ tsp black carrot powder (dissolve in 1 tsp water) ⁣ ⁣ *Recipe makes 2 small toppers. Double the recipe for larger toppers. ⁣ ⁣ In a small saucepan, combine sugar, syrup and water. Heat a low medium heat. Gently stir with a silicone spatula. Let it come to a boil. Once you get the boiling sugar to the 145C (Use a candy thermometer), remove it from the heat. Stir in the dissolved carrot powder. ⁣ ⁣ Very carefully pour it onto a silicone mat (DO NOT touch the sugar syrup, it’s extremely hot) . Move the silicone mat to spread it out if necessary. Shape it over a tall bottle or glass. Use office clips or spring clamps to make the folds. Let harden for 20 to 30 minutes. Gently remove clips and peel off the silicone. ⁣
