cinnamon buns with lemon drizzle icing , and my take on jammy dodgers ; raspberry and coconut biscuits sandwiched with raspberry jam 😋

godfather cupcakes for sam (my bf) almond “amaretto” cupcakes topped with jack daniels infused buttercream and cocktail cherries , inspired by sam’s favourite pitcher at spoons  they look a little sloppy i’m not happy about that but at least these ones won’t ruin my diet because i hate jack daniels 👍🏻

gluten free victoria sponge 🍰 raspberry sponge sandwiched with lemon whipped cream frosting and raspberry jam , frosted with lemon buttercream and handmade raspberry buttercream roses 🌸 to be honest i’m not 100% happy with how this one looks on the sides with the frosting but hopefully practice will make perfect 🤞🏻

this was also my first time making cupcakes AND my first time using a piping bag and i’m so happy with how the roses turned out !! 

i made these again with my nan in mind, although my boyfriend (who doesn’t follow a gluten free diet and is quite fussy sometimes) really enjoyed these and i’ve had to make more just for him !

its worth noting that with the wheat free flour, they didn’t brown as nicely while cooking and i noticed that the cross in particular was quite hard, so maybe i need to experiment a bit more to get these as close to the real version as possible

if i made this custard buttercream again i would definitely switch out the custard for custard powder or even homemade custard, as i had quite a few issues with separation !

i wasn’t too happy with how this one turned out and shortly after it completely collapsed in the fridge ! the base wasn’t strong enough for the filling
