Ingredients: 1 cup all-purpose flour. 1/2 cup granulated sugar. 1/2 tsp baking soda. 1/2 tsp baking powder. 1/4 tsp salt. 1/2 cup buttermilk. 1/4 cup unsalted butter, melted. 1 large egg. 1/2 tsp vanilla extract. 1/4 cup diced rhubarb. 1/4 cup diced strawberries. 2 tbsp unsalted butter. 1 cup powdered sugar. 2-3 tbsp milk. 1/2 tsp vanilla extract. Sprinkles optional.
Instructions: Preheat your oven to 350F 175C. In a mixing bowl, combine flour, sugar, baking soda, baking powder, and salt. In another bowl, whisk together buttermilk, melted butter, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the diced rhubarb and strawberries. Grease a doughnut pan and fill each cavity with the batter, about 2/3 full. Bake for 10-12 minutes or until the doughnuts spring back when touched. While the doughnuts are baking, prepare the glaze. In a small saucepan, melt 2 tbsp of unsalted butter over medium heat until it turns brown and fragrant. Be careful not to burn it. Remove the browned butter from heat and whisk in powdered sugar, milk, and vanilla extract until you have a smooth glaze. Once the doughnuts are done, remove them from the oven and let them cool for a few minutes before transferring them to a wire rack.
