A delightful autumn salad featuring roasted butternut squash, crusty bread, cherry tomatoes, and a tangy balsamic dressing. This Panzanella salad captures the flavors of fall in a bowl.
Ingredients: 1 small butternut squash, peeled and diced. 2 tablespoons olive oil. Salt and black pepper to taste. 4 slices of day-old bread, cubed. 1 red onion, thinly sliced. 1 cup cherry tomatoes, halved. 1/2 cup fresh basil leaves, torn. 1/4 cup balsamic vinegar. 3 tablespoons extra virgin olive oil. 1 garlic clove, minced. 1 teaspoon Dijon mustard. Salt and black pepper to taste. 1/4 cup grated Parmesan cheese.
Instructions: Preheat the oven to 400F 200C. Toss the diced butternut squash with 2 tablespoons of olive oil, salt, and black pepper on a baking sheet. Roast in the preheated oven for 25-30 minutes or until tender and slightly caramelized. Remove from the oven and let it cool. While the butternut squash is roasting, place the cubed bread on another baking sheet. Toast in the oven for about 10 minutes or until the bread is crisp and golden. Remove from the oven and set aside. In a large bowl, combine the roasted butternut squash, toasted bread cubes, red onion, cherry tomatoes, and torn basil leaves. In a separate small bowl, whisk together balsamic vinegar, extra virgin olive oil, minced garlic, Dijon mustard, salt, and black pepper. Drizzle the dressing over the salad and toss to combine.
