Have you ever made this cake?  It’s a depression era recipe that uses vinegar and baking soda to make it rise.

I have not tried this particular recipe (though I did just come across and bookmark it... are you addicted to Buzzfeed, too?). The technique, however, pops up frequently in my go-to vegan baking sources. It's even the trick to my mom's orange cake, which is neither ostensibly vegan nor ostensibly "economy" and yet is both. Needless to say, I will be end up making this at 3:00 a.m. during a bout of manic insomnia some night.
