Thought id whip together a simple red, white, and blue cake for a independence day party. I do bake a cake pm every week lately because I have developed a sweet tooth. Date is good on the box.

Then this started happening lol! All together i probably managed to beat this cake batter for about 30 seconds before I gave it. Basically it moved like the consistency of bread dough 😱

At this point it would have been reasonable to scrap the batter but as an experimenti kept going. It was very difficult to spread across the pans but it got there eventually.

I forgot to take a photo right out of the oven and unexpectedly they both come out with a rather nice dome on top. Which rapidly deflated and they ended looking like this. But still we are not quitters in this house!

But also it was clear at this point it could not be served at a party and didnt need to be pretty. Rapidly assembled and put in the fridge overnight.

I was impatient to see what became of this "cake" so I cut a slice for breakfast! Words are failing me here. It tasted as one would expect a red velvet and blueberry cake to taste. But the consistency. 🫠 Sort of like a very moist torte or sweet quick bread at bit overmixed. Or like if red velvet cake and brownies and foccacia all got together and made a baby. Probably just gonna bin it but I am glad I gave it a chance.

My completely non-pastry chef opinion is something went wrong with the measurements of red dye powder with this batch because it really is extremely red and was staining a lot in the kitchen. I really had to scrub to get it off my hands. But I will contact pillsbury about it. I bake pillsbury a lot so I'm not too worried about it. (In fact if you haven't tried their pistachio mix pick up a box and fold in like 1/2c mini chocolate chips it's out if this world.)
