I'm trying to mend my shorts in a way that'll stave off the fabric from fraying any more, but I don't really know what I'm doing
It looks very cool and should work somewhat. It looks like the tiny line of gold stitches right by the edge of the fabric is all that was stopping the fraying before, which implies to me that they were intended to fray with wear.
Another way to stop the fraying would be to add a hem of some kind. You could wrap the existing edge of the fabric in bias tape and add a visible strip of fabric over the hem. Or you could do what's called a hem facing and sew a strip of fabric along the edge and then fold it to the inside and stitch it down. The hem facing would be less visible, but would reduce the overall length of the shorts by a half inch or so depending on your seam allowance. Search "bias tape edging" or "hem facing" to get more details on these methods if you want to use them. There are plenty of tutorials out there that you can apply to your situation.
Tl:dr Your current method should definitely work, but there are other things you can try if you want.
I've had these shorts for years, but Iirc, they were actually cuffed, and the cuffs eventually came undone. I actually tried putting a strip of fabric on it, but the shorts are stretch denim, while the denim I used was not, making it not very comfortable, so I had to remove it and decided to try what I'm doing now.
I'm still pretty new to mending like this, so for now I'm gonna hope this will work and be comfortable. Thanks for the advice!

I did 3 parallel running stitches and am weaving pink and red thread between them. Thanks for saying it looks nice!
Aaa I gotta undo some of the running stitches on one of the legs because I made them a little too tight, so they stop it from stretching fully and the feeling is noticable

A while back I got this little trash can that's meant to be a pen cup from dollar tree. Originally I was gonna use it like an actual trash can for eraser shavings and stuff, but it ended up being really convenient for thread scraps when I'm sewing. And when it's full, I use it for stuffing for cat toys I make with fabric scraps. Not sure if all this scrap hoarding is normal, but they don't take up much space, so I think it's fine
