While it feels like the ultimate Southern comfort food, early pasta-and-cheese casserole recipes trace back to the 14th century Italian cookbook Liber de Coquina and medieval England's Forme of Cury.
Thomas Jefferson famously fell in love with a pasta and cheese casserole while traveling in Europe. He drew a sketch of a macaroni machine, imported crates of Parmesan cheese and macaroni to his Monticello estate and served it at a state dinner in 1802.
Mac and cheese was very popular during WWII, as it could be purchased with food rationing stamps, with two boxes costing one stamp.
