Ingredients: 3 cans of mixed beans kidney beans, black beans, and cannellini beans. 1 onion, finely chopped. 3 cloves of garlic, minced. 1 bell pepper, diced. 1 cup corn kernels. 1 can diced tomatoes. 1 teaspoon cumin powder. 1 teaspoon chili powder. 1/2 teaspoon paprika. Salt and pepper to taste. 2 tablespoons olive oil. Fresh cilantro for garnish.
Instructions: In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, saut until translucent. Add diced bell pepper and corn, cook until vegetables are tender. Pour in the mixed beans and diced tomatoes, stir well. Season with cumin powder, chili powder, paprika, salt, and pepper. Simmer on low heat for 20 minutes, allowing flavors to meld. Garnish with fresh cilantro before serving.
