As we all know, Citrus juices enhance the natural flavours of the seafood. They balance its richness and provide a refreshing, tangy contrast. Also, the acidity in citrus helps to tenderize the fish, making it more succulent and flavorful.
Often, Yuzu is used in the marination of Fish such as mackerel, salmon or sea bream. The Yuzu Juice is mixed with soy sauce and mirin before grilling. A final squeeze of fresh yuzu juice is also added over grilled fish which enhances its flavor and aroma.
Another dish which is very popular in Japan in which Yuzu fits perfectly is the Yuzu Ponzu Sauce. It is a citrus-based sauce made with yuzu juice, soy sauce, and mirin. The tangy flavour of yuzu ponzu perfectly balances the richness of raw fish. Generally, people use it as a dipping sauce for sashimi and sushi. You can also garnish the sashimi and sushi with thin slices of yuzu peel or a few drops of yuzu juice.
Hot Pots or Nabe is another famous delicacy of Japan. Mothers add Yuzu juice towards the end of cooking to brighten the flavours of the seafood and vegetables in the hot pot. You can also use yuzu peel as you like.
