This salad is great for hot summer days because it is healthy and cool. This Summer Tomato and Cucumber Quinoa Salad is full of fresh herbs, vegetables, and a zesty dressing that will make your taste buds happy. Also, you can eat it on its own as a light and healthy meal or as a side dish at a BBQ or picnic.
Ingredients: 1 cup quinoa. 2 cups water. 2 large tomatoes, diced. 1 cucumber, diced. 1/2 red onion, finely chopped. 1/4 cup fresh basil leaves, chopped. 1/4 cup fresh mint leaves, chopped. 1/4 cup feta cheese, crumbled. 1/4 cup extra-virgin olive oil. 2 tablespoons lemon juice. Salt and pepper to taste.
Instructions: Rinse the quinoa thoroughly under cold water. In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and water is absorbed. Remove from heat and let it cool. In a large salad bowl, combine the cooked quinoa, diced tomatoes, diced cucumber, finely chopped red onion, chopped basil, chopped mint, and crumbled feta cheese. In a small bowl, whisk together the extra-virgin olive oil and lemon juice. Season with salt and pepper to taste. Pour the dressing over the salad and toss to combine all the ingredients thoroughly. Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld. Serve the Summer Tomato and Cucumber Quinoa Salad chilled, garnished with additional fresh herbs if desired. Enjoy!
