This may not seem like a big deal, but I made myself Vietnamese coffee and an omelette with tomatoes, scallions, and cheese for breakfast (well, it’s nearly 2pm, but..) today. I’ve had a huge mental block about cooking here, since I have no pantry stash, a mini fridge, a freezer the size of my forearm, and not a lot of skill working with just a gas stove and no oven, toaster oven, or microwave. Eating out is so affordable here, that’s basically what Diarmuid and I have done on the regular, with very few exceptions. The number of meals we’ve made at home, I can count on one hand. I’m pretty sure I’M the reason why, too, since he was perfectly fine eating noodles and mystery fish with some kimchi on top.Â
Anyway, as the weather slowly turns I’m hoping that helps with my motivation in the kitchen. There’s no a/c in here, which is a huge deterrent from cooking, ever, in the Summer. We did make some nice pancakes yesterday for breakfast, with tomatoes, scallions, cheese as one option, and cinnamon and butter for another. With a side of my new fave fruit, dragonfruit. They’re basically like my new blueberries - I’d have blueberries at every meal back home, when they were in season, and there’s AMPLE dragonfruit everywhere, so I’m stocking and eating.Â
