Super Seedy Power Cookies

When picking out which seeds to include in your cookie, keep this tip in mind: Try to include a blend of both tiny and large seeds. For the former, sesame, flaxseed, and hemp hearts are our favorites. For the heartier ones, chopped pumpkin and sunflower seeds are great. As long as you don’t stick to all small or all large, and instead focus on a blend of the two, you’ll be A-OK.

Ingredients

1 large egg

1 cup smooth almond butter

1 Tbsp. vanilla extract

1 tsp. baking soda

½tsp. Diamond Crystal or ¼ tsp. Morton kosher salt

¾ cup (150 g) coconut palm sugar or (packed) light brown sugar

¾ cup mixed seeds (such as sesame, pumpkin, sunflower, hemp, and/or flaxseed; coarsely chopped if large)

Preparation

Step 1 Place racks in upper and lower thirds of oven; preheat to 350°. Line 2 baking sheets with parchment paper or nonstick baking mats.

Mix 1 large egg, 1 cup smooth almond butter, 1 Tbsp. vanilla extract, 1 tsp. baking soda, and ½ tsp. Diamond Crystal or ¼ tsp. Morton kosher salt in a large bowl with a rubber spatula until combined.

Add ¾ cup (150 g) coconut palm sugar or (packed) light brown sugar and mix until a soft dough forms. (It will be very thick, so use your hands if needed.) Add ¾ cup mixed seeds (such as sesame, pumpkin, sunflower, hemp, and/or flaxseed; coarsely chopped if large) and mix until evenly incorporated.

Step 2 Using a #16 cookie scoop or ¼-cup measuring cup and working one at a time, scoop out dough into portions and roll into smooth balls. Divide between prepared baking sheets, spacing at least 2" apart (about 6 per sheet). Press down to flatten balls into about ½"-thick rounds. (If using particularly dry almond butter, your dough might crack. But don’t worry; once baked, the cookies will be just fine.)

Bake cookies at 350F, rotating baking sheets top to bottom and front to back halfway through, until slightly puffed and cracked, 11–15 minutes. Let cool on baking sheets.

You are the best coach I've ever had!

Starting the week with your radiant, sunshiny attitude always made getting up and swimming in an 86degree pool worth it.

In my 10 years of adolescent swimming and my almost 1 year of being back in the pool as an adult, you have been my #1 favorite coach ever. So encouraging, positive, kind, always looking for ways for us to improve. Thank you for what you do!

If any other coach had been there for my first time back in a body of water since high school, I really don't think I would have come back considering the dysphoria, asthma, self-consciousness, and being out of shape lol. You were so welcoming and excited to have us that I had to keep coming! Extra plus that having another transmasc person in a position of authority is such a powerful thing!

I'm having fun under the other coaches but you'll always be the GOAT. :)

I'm glad to hear that Dahee is continuing to work with the youth!

I established the original youth program at Minkwon and headed it from 2002 to 2007, so I took great care in overseeing it and making sure that subsequent youth leaders would be adequate for the role after I transitioned to being a member of the board. (check wording/facts?)

Dahee is a straightforward, thoughtful individual who cares about the teens under their charge to a remarkable extent (wording?) in addition to their community at large, whether it be their workplace or their neighborhood.

They are very friendly and cooperative. They'd greet every single person in the office every morning which improved coworker comradery. Dahee has never been above any job, actively volunteering to set up and take down equipment, cleaning up messes, and staying late with clients who weren't theirs in order to help. I saw them often volunteering and attending community events after work hours and on weekends - this significantly boosted Minkwon's reach and visibility.

They are very persistent; I was one of the board members who supported them when they wanted to have our organization participate in Queens Pride despite push-back from other senior staff and board members, and they can be loudly, enthusiastically stubborn about fighting for what they consider fair and just which can rub some people the wrong way. Occasionally some in the office felt like Dahee was stepping out of their bounds as a youth organizer by trying to implement new programming or community spaces, although they always tied these ideas back to benefiting the youth under their care.

what's not working

i cannot stay for 4plus hours at a time. because I don't hang out with ANYONE for more than 3 hours at a time. it makes me really tired and cranky, hence the face twitching

I don't like the timing or having to go over there at 11pm? I know you're awake during the day until the afternoon

i feel like I have been prioritizing your feelings and needs over my feelings and needs and the resentment has built over the years so I needed some space to figure out how to deal with it, that's why I went silent for a while

i really like being your friend. I like shooting the shit with you, I like encouraging your sluttiness, and I like hanging out with you. what I cannot do is hang out with you for 7 hours anymore. 11pm to 6am is seven hours! after 3 hours I get cranky and tired because it's hard for me to hang out for more than that with anyone! I never hang out with my other friends for longer than 3 hours but I didn't want to say anything with you because you'd be upset about it. the face twitching only happens when i'm tired and cranky and I want to go home - the doctor said it was stress :(

i also don't think you can think of me as your shrink anymore. its not healthy to depend on me so much. that's exactly what my mom and sister did and I stopped talking to them because it's too much emotional labor and I feel smothered. it's a lot to take!
