Staff Issues:
1. Brian did now show up for his shift at 11:00. I called him and he said he spoke to you Mary about not being able to make it today until later. We are left without a busser for lunch. We need to make sure these shifts are covered and we communicate these issues for obvious reasons. -G
2. Tanner called and told Zac he was sick. I was here when he called and Zac did not bother to get me. I told Zac he needs to get a manager when people call in sick. He doesn’t have the authority to clear this. I called Tanner and left a message for him to call me. If he doesn’t call back, I call b.s. on his story and will write him up for an unexcused absence. –G Fyi, Tanner did finally call back and spoke with me. I cleared it with him as he sounded very ill. -G
3. Aaron did not take a break yesterday. Any reason for this? Joey, Geovani did not take a break yesterday either. I think it’s the second time for him in the last few days. Any idea why he isn’t? -G
4. Mary, let’s develop an official system for shift change requests. Shift change requests are to be filled out by both employees and placed on the shift request clipboard. When one of us approves it, let’s sign and date it, and immediately cross out the scheduled name on the schedule and write in the employee who is working, and initial it. We’ll keep the approved shift change request on the clipboard so we can track which changes were approved and by who. At the end of every week, we can clear the clipboard. I will still put absence requests for future schedules in your box. Let me know if this makes sense. Thx. -G
Other Comments:
1. I started a “We Need” clipboard in the kitchen. Any items we come across that we are out of, let’s write on this sheet, date, and initial it. This way it will stay fresh in our minds to order and we can track trends of items we continually run out of and can fix par levels if need be. When we order an 86’d item, just cross out the item and initial and date next to it the date the item was ordered. Then we’ll know that item has been taken care of. This should help with running out of things. Thanks guys. -G
2. Joey, I got you a wall basket. I’ll put all Joey related things here. –G
3. I got more pens, sharpies, highlighters, a few more clipboards, and another labeler also. I want to eventually put labels where everything goes throughout the kitchen so people can’t misplace things. -G
4. Hibiscus is fixed. –G
5. Mary, EcoLab will be out tonight to do another service. You only have to cover glassware, plates, pots, pans, and anything we eat or eat off of(that’s not sealed) with plastic. You don’t have to move anything. The morning crew should be ok to unwrap everything. I instructed Analee to call me if she has any questions. Also, leave the EcoLab folder out on the To Go counter for them to fill out. Thx. –G

7. Tapped Snow day… updated the computer but didn’t have the barrel price to finish the cost sheet… Sorry Jeff, can you look into that for me? Thanks, ~M
8.I came in early morning Tuesday to fix the tasting for Taco Tuesday, I found the entire silverware holder uncovered also a bag of coffee open and left at the chip station. All colored cutting boards were not covered and the line’s white boards were also not covered. Skillets were also left uncovered next to the uncovered salt shaker we use for the grill. CJ
White cutting boards from the line were put in the walk-in along with silver ware. I will have the crew wash the color coded boards upon the start of their shift.-CJ
