Ingredients: 4 large carrots, peeled and sliced. 1 can 15 ounces white beans, drained and rinsed. 2 cloves garlic, minced. 2 tablespoons olive oil. 1 tablespoon lemon juice. 1 teaspoon ground cumin. 1/2 teaspoon smoked paprika. Salt and pepper to taste. Fresh parsley, for garnish.
Instructions: Preheat the oven to 400F 200C. Place the sliced carrots on a baking sheet. Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Roast in the preheated oven for 20-25 minutes or until tender and slightly caramelized. In a food processor, combine the roasted carrots, white beans, minced garlic, lemon juice, ground cumin, smoked paprika, and remaining 1 tablespoon of olive oil. Process until smooth and creamy. If necessary, add a splash of water to achieve desired consistency. Taste and adjust seasoning with salt and pepper if needed. Transfer the pate to a serving dish, garnish with fresh parsley, and serve with crackers or sliced vegetables. Enjoy!
