Ingredients: 2 cups almond flour. 1/4 cup coconut flour. 1/3 cup erythritol or preferred keto-friendly sweetener. 1 teaspoon baking powder. 1/4 teaspoon salt. 4 large eggs. 1/4 cup unsweetened almond milk. 1/4 cup melted coconut oil. 1 teaspoon vanilla extract. 1 cup fresh blueberries.
Instructions: Preheat your oven to 350F 175C. Grease a loaf pan or line it with parchment paper. In a mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, and salt. In another bowl, beat the eggs, then add almond milk, melted coconut oil, and vanilla extract. Mix well. Pour the wet ingredients into the dry ingredients and stir until combined. Gently fold in the blueberries. Pour the batter into the prepared loaf pan and spread it evenly. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
