First Post - Italian Sausage Soup
Welcome to my first post. I've had people asking me how I make certain things so I thought this may be the best way to get them out. I am starting with a Italian Soup.
This is a soup I make when I have a large group of people at my house because it is a low cost way to feed a big group of people.
1 package of ground Italian sausage either sweet of hot, which ever you prefer
4 russet potatoes, washed and diced, the smaller the dice the faster they will cook
1 48 oz box of chicken broth, or you can use some you make yourself
1 cup heavy whipping cream
3 Tablespoons chopped garlic
salt, pepper, garlic powder and red pepper flake to taste
Heat oil oil in a large pot. I generally use a dutch oven or small stock pot for my soup. Add the onions and chopped garlic and cook until soft. Add the sausage and crumble it while cooking. Once the sausage is cooked, add the diced potatoes and toss it in the sausage and onions before adding the chicken broth. Cook until the potatoes are soft. Taste for seasoning. Add salt, garlic powder and pepper as needed.
Then add the spinach and still until wilted, then add the cream and cook until it is heated though. Taste again and adjust seasonings to preferences. This soup is supposed to be spicy so don’t be shy with the red pepper flakes, but taste between additions so it isn't too spicy for you.
Serve with French bread or rolls and a salad.
