Here is the complete recipe for Pan-Seared Lemon-Ginger Spiced Chicken, tailored exactly to your ingredients and the tools you have on hand.
Ingredients & Measurements
2 boneless chicken breasts (whole)
1/8 tsp cayenne pepper (a small pinch)
1. Prep the Chicken (No Knife)
Pat the chicken breasts completely dry with a paper towel.
Place the chicken flat on a clean cutting board or counter.
Use the heel of your hand to press firmly down on the thickest parts of the breasts to flatten them to an even thickness.
Mix all your dry spices (salt, pepper, Italian seasoning, onion powder, ginger, turmeric, and cayenne) together in a small cup.
Rub this spice blend thoroughly over both sides of the chicken breasts.
Place a garlic clove flat on your counter.
Put the flat back of a metal spoon directly over the clove.
Press down hard with the heel of your hand until you feel it smash.
Peel off the loose skin and discard it. Repeat for all 3 cloves.
Place a frying pan on the stove over medium-high heat.
Melt the 2 tablespoons of unsalted butter in the pan.
Add the seasoned chicken breasts immediately once the butter melts.
Let the chicken sear undisturbed for 6 to 8 minutes until the bottom forms a golden-brown crust.
Use two forks to flip the chicken breasts over.
Drop your smashed garlic cloves right into the melted butter surrounding the chicken.
Cook for another 6 to 8 minutes on this second side.
During the last minute of cooking, pour the 2 tablespoons of lemon juice into the pan. Use your spoon to scoop the bubbling lemon-garlic butter and pour it over the top of the chicken several times.
Use your forks to lift the chicken out of the pan and let it rest on a plate for 5 minutes so it stays juicy. Keep the pan with the juices on the warm stove (turn off the heat).
Hold the chicken steady with one fork, and use your second fork to scrape and shred the meat apart into bite-sized pieces.
Toss the shredded chicken directly back into the warm spice-and-butter sauce left in the pan before serving.
First pic on right is before it was done. This is good. Serve with rice or pasta or bread. I will be serving with mixed vegetables and that's all
This will last me 4-5 days for my dinner only. Depending how many pieces I put into my small bowl at a time.
