Ingredients: 1 cup tofu scramble crumbled tofu with turmeric, black salt, and nutritional yeast. 1/2 cup black beans canned, drained, and rinsed. 1/4 cup diced tomatoes. 1/4 cup diced red bell pepper. 1/4 cup diced red onion. 1/4 cup chopped fresh cilantro. 1/2 tsp cumin powder. 1/2 tsp chili powder. 1/4 tsp paprika. Salt and pepper to taste. 4 small corn tortillas. 1 avocado sliced. Hot sauce optional, for extra spiciness.
Instructions: Heat a non-stick skillet over medium heat. Add the diced red onion and red bell pepper. Saut for 2-3 minutes until they begin to soften. Add the crumbled tofu and spices cumin powder, chili powder, paprika, salt, and pepper. Cook for another 3-4 minutes until tofu is heated through and well-seasoned. Stir in the black beans and diced tomatoes. Cook for an additional 2-3 minutes until everything is heated. Warm the corn tortillas in a dry skillet or microwave for about 30 seconds. Assemble your tacos by placing a scoop of the tofu scramble mixture onto each tortilla. Top with avocado slices and chopped cilantro. Drizzle with hot sauce if desired.
