you're correct that the opposite of bitching does exist, and it's generally referred to as studding. it is, however, much less common. even if you're into omegaverse and read it regularly, you may have never come across the term, which is why I didn't include it in the common tropes.
and part of that lack of popularity is that a commonly appealing sexy way of studding someone has yet to be found/spread. bitching is similar to forcefem kink, and there's just something compelling about fucking someone so hard their biology changes in response, whether they want it to or not.
that... doesn't really work for studding, though. in order to become an alpha, the omega would have to be the one to assert dominance and do the fucking, after all. I guess fucking someone so hard your own biology changes to fuck them even better could also be an interesting concept, but it's not one that has caught on.
so, official answer: there isn't really an established way of studding, the way there is for bitching.
now, two more answers
studding as in transitioning. this, while still not super common, I've seen a few times. this comes from a perspective that sees a/b/o dynamics as a secondary gender and therefore assumes people can trans their secondary genders just like their primary ones. these stories may include characters changing from any secondary gender to any other, including from omega to alpha, but betas aren't excluded either. the process then looks very similar to real life gender affirming care - the omega will take alpha hormones which will then cause their body to change, possibly including the growth of a small knot - or that can be added through surgery. the alpha hormones will stop heats and replace them with ruts, though if the omega has a pussy, they won't be able to change that, you'd need bottom surgery.
my theory of sexy studding. (fair warning I haven't read this anywhere this is just me speculating how it could be done because yes I've thought about this and talked about it with friends before lmao)
this is probably gonna require the omega to want to be studded, or at least instinctually desperate to be dominant during the act.
one way to do it could be through an omega/omega relationship. as in, one omega goes into heat, and the other has to do his best to satisfy him with only his omega assets - repeat over a couple days with both of them driven to near insanity because of the unsatisfied heat, and boom! the studding omega may start releasing their first alpha pheromones, or even pop a small knot. logically, the actual change should probably take a while longer, but it's easy to say once the process has started, it won't stop unless you intervene in it, and the omega grows into a real alpha over the next couple months or so as his body starts producing more and more alpha hormones.
alternatively, if the partner is an alpha, the trigger could be the ability to make the alpha submit against their instincts (with their consent or through force, doesn't really matter). making an alpha come purely through him getting dicked down by omega cock is pretty hot, I'd say, quite possibly even hotter if it turns the omega into an alpha. hell, you could say it doubles as a bitching process, too.
either way, depending on how biology works in your verse, one crucial part could be the mating bite. assuming omegas are supposed to be only on the receiving end of it, them biting someone else's mating gland during heat/rut could also function as the initial trigger for the studding process.
what this really means is that studding can work however you want it to! if you wanna read it, write it, and hope someone else will see your vision so it may eventually catch on~

In the easiest terms possible, bitching is when an alpha fucks another alpha so hard it turns them into an omega.
Yes, the reverse of it does exist, and is known as studding. That is, however, much less popular and less explored as a concept.
Bitching is not a necessary part of the omegaverse - in plenty of fics it's never mentioned, while others outright state it's impossible and just a porn myth. But it's still a rather popular trope, if you've poked around the omegaverse tag on tumblr or ao3 before, you've definitely come across it.
So how does it happen?
Usually through smut. Two alphas fuck, but one establishes dominance and tops, while the other has to submit. Depending on the fic, that can be all it takes, or there can be more conditions that need to be met before anything substantial happens. Sometimes it needs to be done consistently over an extended period of time. Sometimes one or both of the alphas need to be in rut. Sometimes a mating bite (usually only given to omegas) is what triggers the change. Sometimes it's specifically the process of knotting. Other times, it's something more psychological, close to a complete mindbreak, with the bottom alpha submitting their entire being to the one dominating them.
Does it have to be an alpha doing the bitching?

Usually, yes. A lot of the requirements like ruts, knots, or even the ability to give mating bites tend to be exclusive to alphas. However, there are always exceptions to the rule, and people are always eager to go where nobody has gone before. I don't remember any specific fic that had an omega (or beta for that matter) bitch an alpha, but so long as any alpha-specific requirements are removed or circumvented, there's no reason it couldn't happen. If your omega is male, he can still dick down that alpha. Knots can be simulated if need be. The alpha getting bitched can still be held down or restrained and forced to submit against their alpha instincts. You could put a fun spin on it and say the omega being in heat actually accelerates the process as it's more humiliating for the alpha. Or you could be mean and say it takes longer if the one doing the bitching is an omega compared to an alpha. The world is your oyster as this is rarely treaded ground.
And then what?
A lot of the time, the bottom alpha will then enter their first heat which confirms they've been bitched, and, predictably, leads to even more sex.
Often, more bodily changes follow, though depending on the realism of the fic, they may take time to actually grow, up to a couple months.
The bitched alpha may start producing slick and omega pheromones, gain omega instincts such as the need to submit or nest, and may even grow an uterus and gain the ability to become pregnant. Notably though, in many fics bitched alphas lack that capability, and in some their scent, while turning sweeter, still gives them away as not a true omega even if they're bitched and bonded.
Why would anyone want to be bitched?
There are a few general reasons. Something close to gender dysphoria, or wanting to be able to mate/reproduce with a desired partner. Sometimes it's more arranged marriage style, often in royalty AUs a heir needs to be produced with no omegas around so one alpha has to take one for the team. It may also be a case of unbalanced gender ratios inside a pack, with one member choosing or being chosen to be bitched to satisfy the pack alphas and produce offspring.
A lot of the time, though, well. Nobody wants to get bitched. This trope is not particularly friendly to people who enjoy at least a little bit of dubcon or honestly straight up non-con.
Even in a best-case scenario, submitting and bottoming tend to go against an alpha's base instincts, so they will likely struggle and try to stop the bitching even if they agreed to it beforehand.
Mostly bitching happens entirely involuntarily though. It's the dominating alpha who wants to force the other one to submit, to literally fuck the alpha out of them as a show of their own power.
So being a bitched alpha kinda sucks
On a societal level, bitched alphas tend to be on the absolute bottom of the social ladder. How intense this is of course depends on the story, but generally, a bitched alpha is seen as a failure of an alpha. They had all the potential at birth to become succesful leaders, but lost the battle for dominance so badly they lost all their status and desire to even try along with it.
Especially if bitched alphas aren't capable of giving birth, they're essentially just worse versions of omegas. Good enough for a quick fuck, certainly not worth mating or marrying.
Sometimes special social rules apply to them, like them losing personhood status, or alphas being permitted only one omega mate but however many bitched alphas on the side they want. It's rare however to actually have them as a social class, as bitching isn't usually that common of a practice, and may even be a crime.

YES of course they would be jealous, have you seen the way they talk? Yandere Ritsu is sooo possessive and he wants you to look only at him, and then you have a partner? In your world? Who can talk to you and see you and hug you and sleep in your lap? And he can't?!?!?! And then because of that partner, you start spending less time on the game, and more time with them. Who does that asshole think they are to steal your attention away from him? They're on borrowed time, anyway, the moment Ritsu figures out how to cross dimensions, he's taking his rightful spot by your side, and that nobody gets kicked to the curb. But, until then, he believes he's owed at least all your attention to make up for the fact that he can't interact directly with you. Ritsu would also try to circumvent the coding to add in his own little lines. Small things like, "You should o~nly look at me, okay?" and "I'm so lonely when you're not around... it's so empty when you close the game." <- he's trying to both freak you out with that one and make you feel sympathy for him. But Ritsu doesn't get very openly hostile towards you, a lot of his anger is at your partner. Though he's not above sending you thinly-veiled threats. Let enough time pass after he becomes self-aware, and he'll become bold. "I wonder if your partner loves you enough to buy dia for you... I guess we can see if I make a~ll your hard-earned dia disappear, huh?" on the day of an event with your favourite character in the centre? He's not above that. And if your favourite character isn't him, he might just do it, too. He's jealous over the other characters, too.
And Mika? He's desperate. First thing he does when he hits self-awareness is cry and panic. He goes existential. He ponders if his existence even matters... until the next time you open the game and he realises the point of his existence. You become his deity. Of course, you're the reason why he can breathe, talk, move, dance, sing. If you lose interest in the game, if you stop playing, he's only surrounded by the darkness of the void... he gets scared. He gets desperate. He calls you back with notifications of a full BP, a phonecall, works, events, he needs you. And then you turn out to have a partner? Mika, at first, isn't sure why he's so angry about that. It's not like he believed someone like you wouldn't have a wide array of lovers to choose from, given he thinks you're perfect, but a part of him had hoped that he could fill that spot. You're the reason he's "alive" like this, it's only natural that he feels like he should belong to you, no? Just wait for him. When Mika breaks the code, he says very weird lines. He doesn't get hostile towards you, but he does say some questionable stuff all the same. Things like a monotone "I hope they die" or a "Why am I not good enough?" An especially scary moment might be when he name-drops your partner, asking what it is that they have that he can't give you. Hope he doesn't find a way to jump dimensions - Mika doesn't have much to lose.

You've actually mentioned some of Ren's more "humanising" quirks! I've mentioned this in the past, but he does get nightmares, and he does pick at the skin around his nails. Ren also has a few visual tells whenever he's lying or uncomfortable.
Regarding Ren's biggest fear (that doesn't include Angel), it'd probably be something related to his father, like being dragged back to the trailer park or reliving some of the more harrowing experiences Taylor put him through as a child.
Lastly, some aspects of Ren that tend to get overlooked or misunderstood by the fandom... I'd probably say how folks perceive Ren as a yandere in general ^^; For most people, Ren is either "too soft" to qualify as a yandere, or he's heavily mischaracterised because they only see him for his "yandere" trope. Ren has a lot of nuance to him, and folks tend to forget that he's not the kind of yandere who'd physically hurt their obsession to get what they want.

1.- Is Ren left handed? Because his ring is on his left hand, and I noticed that in the +18 scene on I think it was day 2 we said that we could feel the ring (Iâm sorry what the helly am I even paying attention to???)
2.- Itâs been mentioned before that [REDACTED] likes spiders and cats, but he doesnât really care about animals nor any other thing or being aside from Angel, so, is it like the way some people like plants? Like âOh, this flower is so prettyâ but when it dies they are like âOh, okay, anywayâŠâ?
3.- On day 5, if we go to our house and we start cooking, Ren tells us about the burn marks in his hands, and I have a quite complicated and very specific question, when they say that their hands are gradually losing any sense of touch because of the nerve damage, to which extend is it? Like the whole part of his body that is burned or like a little further or not completely?

Zombie Apocalypses also open up the accepted parameters of free will. Yes, you have free will now but there is still the guise of rules with government. When martial law has ended, when the crown falls down, when there is no way for the governing parties to communicate the people are free. But when people are completely free there is nothing to stop them but another human with free will. And not everyone with free will will use it for good. In fact most who have this realization tend to do whatâs most frowned upon as a means of catharsis.Â
With this in mind you are on edge about anyone modeling a modicum of kindness extended towards you. It didnât take long for you in this rough environment to realize that was more than draining but better for survival. Having to turn down people you saved or who saved you and extended a hand to you in kindness. But youâve watched them turn on each other like rabid strays. Stab one another in the back if it meant food or water when the undead were blocking the only source. The structure for the group works well enlisting a flexible medium for everyone just trying to survive.
