This rich Tiramisu Parfait is a new take on a traditional Italian dessert. A delicious take on the classic Tiramisu, this one has layers of coffee-soaked ladyfinger cookies and a rich mascarpone cream.
Ingredients: 1 cup brewed strong coffee, cooled. 3 tablespoons coffee liqueur. 1 package 8 ounces cream cheese, softened. 1 cup mascarpone cheese. 1 cup heavy cream. 1 cup powdered sugar. 1 teaspoon vanilla extract. Ladyfinger cookies, crushed. Dark chocolate shavings for garnish.
Instructions: In a bowl, combine the brewed coffee and coffee liqueur. Set aside. In another bowl, beat the cream cheese until smooth. Add mascarpone cheese and continue to beat until well combined. In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Gently fold the whipped cream mixture into the cream cheese and mascarpone mixture until smooth and well incorporated. In serving glasses or bowls, layer crushed ladyfinger cookies followed by a drizzle of the coffee mixture. Top the coffee-soaked cookies with a generous layer of the cream mixture. Repeat the layers until the glasses are filled, finishing with a layer of the cream mixture on top. Chill the parfaits in the refrigerator for at least 2 hours to allow the flavors to meld. Before serving, garnish with dark chocolate shavings. Serve chilled and enjoy the decadent tiramisu parfait!
