A delicious chicken pesto panini is made in a cast iron skillet with soft chicken, tasty pesto, and gooey mozzarella cheese. The chicken, pesto, and cheese are all grilled to perfection between two slices of Italian bread.
Ingredients: 2 boneless, skinless chicken breasts. Salt and pepper to taste. 1/4 cup pesto sauce. 4 slices of Italian bread. 4 slices of mozzarella cheese. 2 tablespoons butter. 2 tablespoons olive oil.
Instructions: Season chicken breasts with salt and pepper. Heat olive oil in a cast iron skillet over medium-high heat. Add chicken breasts to the skillet and cook for about 6-7 minutes per side, or until fully cooked and no longer pink in the center. Remove chicken from the skillet and let it rest for a few minutes. Then, slice it into thin strips. Spread pesto sauce on one side of each slice of Italian bread. Place a slice of mozzarella cheese on top of the pesto-covered side of two bread slices. Add the sliced chicken on top of the cheese, dividing it evenly between the two sandwiches. Top each sandwich with another slice of mozzarella cheese and a second slice of bread, pesto side down. Spread a thin layer of butter on the outside of each sandwich. Heat the skillet over medium heat and add the sandwiches. Cook for about 2-3 minutes on each side, or until the bread is golden brown and the cheese is melted. Remove from the skillet, let them cool for a minute, then slice the panini in half. Serve your delicious chicken pesto panini hot and enjoy!
