Jamaican Chicken ( 1-2 persons)
Ingredients: 1 large chicken breast
1 Tablespoon allspice
1 Tablespoon dried thyme
1 1/2 teaspoons ground sage
3/4 teaspoon cinnamon
1/4 teaspoon cayenne pepper
1/4 cup Only Herbs Garlic olive oil
Juice of 1 lime
1 medium onion chopped
5 garlic cloves, peeled and crushed
1/4 can of tomate titurado
Directions:
1 teaspoon oil on to frying pan, add onions, garlic and chopped bell peppers (i used green peppers) and fry for 5 mins, add chicken until cooked and add tomate titurado. Let the chicken soak up the juices and BAM.

NEW YEARS RESOLUTIONS!
Spanish style Quinoa Seed recipe!
Ingredients:
1 teaspoon veg oil
1 cup uncooked Quinoa
1 medium onion finely chopped
3 cloves of Garlic (minced)
1 small green bell pepper chopped
8 oz of tomato sauce
2 1/2 cups of water
1 teaspoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon ground cumin
How to make:
Heat the vegetable oil in a large saucepan over medium-high heat. Stir in the quinoa, onion, garlic, and green pepper. Cook and stir 5 to 10 minutes until the onion is tender, and the quinoa has lightly toasted. Stir in the tomato sauce and water, then season with the chili powder, garlic powder, and cumin. Bring to a boil, then reduce heat to medium-low, cover, and simmer until the quinoa is tender, and the liquid is absorbed, about 30 minutes. Stir the quinoa occasionally as it cooks.

We are so lucky to be where we are today.
Just got back from my travels a week ago and I have never appreciated home as much as I do now. I feel like I have been so unappreciative over the years, so spoilt without a clue about what's going on in the world. Thailand Laos and Vietnam are developing countries however are in so much more poverty than I thought! Kids on the streets, mothers feeding their young, cooking, showering with buckets, begging. Some elderly people still are suffering from the effects of the Vietnam war such as missing limbs, cancer, tumors etc. Not only were they bombed but they were poisoned by a powerful powder
"As little as 85g of agent orange could kill an entire city with a population of 8 million people" -Ho Chi Minh City War Museum.
Imagine the impact of this... 11 million to 13 million gallons of Agent Orange was used. This did not only destroy so many lives but poisoned crops. No food = No friend. I would have been so embarrassed being an American stepping foot into that Museum. The photos up in there spoke 1000 words, so upsetting.
It's so much to take in and so upsetting to see them still suffering. I'm currently sat at home in a brand new room, glass of water and snacks on the side, watching TV off my 38 inch flat screen, my mum is cooking food, Christmas tree in the living room surrounded by presents and I'm moaning about going to work. What I earn in 1 week and a half, Vietnamese people earn in one year. Our standard of living is so high! We are so filthy rich compared to them and we should appreciate it so much more than we do. It's not until you go out there and really open your eyes that you realize how much we've got and take so much for granted.
