Zabaglione Parfait is a traditional Italian dessert made with layers of light zabaglione cream and fresh mixed berries. It is rich and velvety. When you mix sweet Marsala wine with delicious berries, you get a treat that will take your taste buds to Italy.
Ingredients: 6 egg yolks. 1/2 cup granulated sugar. 1/2 cup sweet Marsala wine. 1 cup heavy cream. 1 teaspoon vanilla extract. 1/4 cup powdered sugar. 1 cup mixed berries strawberries, blueberries, raspberries.
Instructions: Whisk egg yolks and granulated sugar together in a bowl that can handle heat. Put the bowl over a pot of simmering water to make a double boiler. Whisk the mixture all the time until it is pale and just a little thicker. Slowly add the Marsala wine while whisking all the time. Keep whisking it until it gets thick and starts to form soft peaks. Leave it alone until it's cool enough to touch. Mix powdered sugar, heavy cream, and vanilla extract in a different bowl. Whip the mixture until stiff peaks form. Mix the whipped cream into the zabaglione mixture slowly until everything is well mixed. Put the zabaglione cream on top of the berries in bowls or glasses for serving. Put it in the fridge for at least two hours before you serve it. Add more berries as a garnish before serving. Have fun with your delicious Zabaglione Parfait!
