先日、「生姜焼きを作るぞー！」と思いながら完成したのは、肉じゃが。自分でも「なんで〜？」って思いながら鍋の中の肉じゃがを見つめていました。今日は、そのリベンジ版の生姜焼きです。

500個以上お弁当を作ってきましたが、サンドイッチのお弁当はあまり作ることがありませんでした。過去10年で3回。めちゃくちゃレアなお弁当です。言えるのは、パンが美味しくないと作れない。（作らない）今回も、美味しくできました。（笑）

毎日作るお弁当。お皿に盛ればそのまま定食になるように作っています。味付けは、五味（甘味、塩味、酸味、苦味、うま味）が揃うようなおかず作りをしています。五味の中でも苦味って何？と思うかもしれませんが、焼き物の焦げや、金柑などの柑橘系の食品を指すようです。揃うように作るのは難しいのです。

Bento lunch boxes made every day. I make it so that it becomes a set meal as it is when served on a plate. I make side dishes that have all five tastes (sweet, salty, sour, bitter and umami). What is bitterness among the five tastes? It refers to the burnt taste of grilled food and citrus foods such as kumquat. It is difficult to make them so that they are aligned.

気がつけば6時、肉類の解凍を忘れ慌てて作るお弁当。肉の下処理して色々してたら知らぬ間に30分が経過してました。一応、おかずはメイン1、副菜2以上、主食＋α、汁物、デザート又は漬物を入れるのが日々の目標。冷凍食品も使わずに毎日作れていると思います。

When I came to, it was 6 o'clock and I forgot to defrost the meat, so I hurried to make my lunch. I was prepping the meat and doing other things, and before I knew it, 30 minutes had passed. My daily goal is to have at least one main dish, two side dishes, a main dish +α, soup, dessert or pickles. I think I can make it every day without using frozen food.

インゲンが美味しい季節になりました。お弁当のおかず副菜として作ったインゲンのラグー肉料理に合うので作りました。

It is the season when green beans are delicious. I made this green bean ragout as a side dish for lunch as it goes well with meat dishes.

お弁当用に、金柑のコンポートも作りました。

メインのおかずの予定は、「ポークピカタ」か、「キエフ風カツレツ」でした。寝坊をしてしまったのと間違えて違うお肉を解凍していたこともあり急遽メニューを変更し「豚の生姜焼き」に変更しました。いつも、起きてから考えるのでなんとかなるものです。付け合わせは、週末に作っているので詰めるだけ。

The main side dish planned was either 'pork piccata' or 'Kiev-style cutlet'. I overslept and had defrosted the wrong meat by mistake, so I changed the menu suddenly and changed it to 'pork gingerbread'. I always think about it when I wake up, so I always manage. As for the accompaniments, I just stuffed them in because I had made them on the weekend. It's easy.

お弁当用に揚げたチキンフライ。今日もサクサクいい感じ。いつも奥さんから、「ご飯少なくない？」って聞かれますが、ちょうどいい感じデス。はい。

Fried chicken for lunch. It's nice and crispy again today. My wife always asks me, "Isn't there too little rice?" But it's just right. Yes, it is.

うちの奥さんが不思議がるチキンカツの作り方。さくさく揚揚がることが謎のようだ。一時期、小麦粉まぶして、卵につけて・・。の手順で使っていましたが、衣が剥がれたりしてたので、バッター液に漬けてからパン粉を付けるようにしています。（その前処理が一番大切なんですが・・）あとは、愛用のフライ鍋（富士ホーロー 2WAY ホーロー 片手 天ぷら鍋）小さなお鍋ですが、保温性も良くて失敗することは無くなりました。小型の鍋ゆえに一度に揚げれる量も少ないのでカリッと揚がります。

奥さんが驚くのは、翌日になってもカリッと感が無くならないこと。今回は、サーモンも揚げました。

相変わらず美味かった。

My wife wonders how to make chicken cutlets. The fact that it is fried quickly is a mystery. For a while, I covered it with flour, dipped it in egg... But the batter was peeling off, so I started dipping them in batter solution and then breading them. (The pre-processing is the most important part...) I also use my favourite fry pan (Fuji enamel 2-way enamel one-handled tempura pan), which is a small pan, but it retains heat well and I no longer make mistakes. Because it is a small pot, the amount of food that can be fried at one time is small, so it fries crispy.

The wife is surprised that the crispiness does not disappear even the next day. This time, we also fried salmon.
