With lots of healthy fats and protein, this Keto Avocado Chicken Salad is a great way to start the day. It's great for people on the paleo or keto diet.
Ingredients: 2 cups cooked chicken, shredded. 2 ripe avocados, diced. 1/4 cup red onion, finely chopped. 1/4 cup celery, chopped. 1/4 cup mayonnaise. 1 tablespoon lime juice. 1 teaspoon Dijon mustard. Salt and pepper to taste. Lettuce leaves for serving.
Instructions: In a large bowl, combine the shredded chicken, diced avocados, red onion, and celery. In a small bowl, whisk together the mayonnaise, lime juice, Dijon mustard, salt, and pepper. Pour the dressing over the chicken mixture and toss gently to combine. Serve the chicken salad on lettuce leaves or in a bowl.
