Vegan pasta salad
Hello my brujas! I’m a witch but I’m also becoming a pretty good cook, so I wanted to share this tasty recipe I learned a while ago. This recipe isn’t only for vegans of course (I’m not even vegan myself), and it is very healthy.
Ingredients per person:
100g of pasta (This one’s your choice, use the one you like the most :))
1 carrot
2-3 cherry tomatoes
100g of chickpeas
1 garlic clove
1 onion
Dried oregano
Extra virgin olive oil
Some parsley leaves
Pepper
Salt
Directions:
Make the pasta: Fill a cooking pot with water and boil it. Add a tablespoon of salt to the water and then add the pasta. Follow the directions on the box/bag of pasta to see when to take it out (it’s usually 10 min) and drain it. Then, wash the pasta with cold water.
Cut the vegetables in medium-small pieces. Chop the garlic into small pieces.
Toss the pasta, the chickpeas and all the vegetables in a bowl. Add some dried oregano (as much as you like), some parsley leaves and dress with extra virgin olive oil, salt and pepper.
Mix it all.
Enjoy!
