Eliot takes meticulous care of his knives. It's a mediation of sorts, laying each one out on a specialty cloth, using a cleaning kit he assembled himself. It contains obscure oils and a high-quality whetstone he picked up during a stint in the Netherlands.
He cleans his chef knives twice a month, sometimes turning on music and sometimes doing it in complete silence. It's nearly impossible to talk to him during this, it's better to simply wait him out.
While Eliot doesn't like to carry weapons, he usually has at least 2-5 knives with him, depending on the needs of the job. One professional multitool is looped on his belt, next to a larger, utility knife. He prefers to hide them beneath his shirt, easily accessible but not visible. Other locations include boot sheaths, horizontal carry at the small of his back, and up his left sleeve.
Each of these knives are cleaned weekly, or after a job, whether they need them or not. This is not as much of a mediation; he will often be distracted and more focused on the knife, but it is possible to rouse him. You'll probably get a dry, sarcastic comment, but that's typical.
