Are any of the other “evil seven” billionaires going to be mentioned or was it just Eckerburg
While I don't think we'll see all of them, I think chances are good that we'll meet one or hear about a few of them.
Eckerberg's death leaves a HUGE power vacuum in its wake, in everything from tech and politics to social influence and investment in magic. Someone will have to fill that void, one way or another.

ADAM BLACKWELL: No. I mean... yes, I could, but the more you rely on the universe knowing what you mean by “this thing” the more you leave yourself open to getting fucked over by a passing trickster god.

but... that's nine rings, no? why do they keep talking about eight rings? what am i getting wrong?
I've been asked about this a few times now, enough to make me realize that perhaps something wasn't as clear as I thought it was when I wrote it. It's not the greatest form in the world to just answer it here, but just to clarify what's happening with that count...
Okay, so let's break it down from the point of view of Episode 12.
The first four (movement, mind, divination, sympathy) are all accounted for. There's people out in the world that have them and are using them.
Then, before the commercial break, Adam, Amy, and McCandless translate two more tablets, which seem to point towards the Ring of Skies and the Ring of the Body. That's six so far.
And then, while Adam is out in the garden talking to President Shepherd, McCandless and Amy crack the basics on two more tablets, which allude to the Ring of Demons and to a ring that lets you talk to the dead. That's eight, which is the full set.
The confusion arises from an exchange that McCandless and Amy have shortly after the commercial break, in which they go:
AMY STIRLING: All right, so... “in this covenant is granted... the... dominion over... issues -”
JULIAN MCCANDLESS: “- or matters -”
AMY STIRLING: Right. “... of the...” I don’t know “daionica.”
JULIAN MCCANDLESS: It’s a slippery term. Lots of double meanings. But generally... “distant place?” “Far off place?”
AMY STIRLING: So another ring related to moving matter? To… speed? Adam what do you think?
Which is where a lot of people have been left with the impression of a phantom ninth ring that doesn't quite fit with any of the other ones.
The thing that to my mind was dazzlingly obvious (but which absolutely isn't, given how many people have asked about it) is that while Adam is off in the garden, Amy and McCandless realize that the "distant, far-off place" that daionica is referring to is... well, death. Or the place where things go after life. The ultimate distant place that we can't really reach, if you will.
So yeah - that's what's going on there, with that seeming discrepancy.

We see when Amy realizes she has a crush on Adam (thank you, Andie), but when did Adam realize he liked Amy?
There's some moment where he realizes he likes her during their days at Sinclair, but one of the big moments when things get unstuck in his head is when Andrea yells at him during her Christmas party in 2028.

How did you develop the languages of the Harbingers? Do you have a language guide/dictionary/grammar book that you utilize for writing, or do you develop as you go? The linguistics of this show is fascinating to me! Thank you for all the hard work you and the cast and crew have done!

Here's an answer that I gave about the conlang stuff in the show from a while back, which goes into as much depth as there really is to be had on the subject. (Which, uh, is not a lot. 😅)
Short version: I've done a good deal of work on those, but it's largely in creating a framework that makes the Harbinger languages sound kind of consistent/of a sort with one another, rather than developing a full syntax, vocabulary, and grammar for them. Actually creating them in full would be well beyond my abilities!
Is Adam or Boston Amy's mulkadir, or are we going to see what hers is down the road? (I'm assuming a mulkadir is an actual thing, though I do wonder if it's not so much the result of fate but the end result of wielding reality warping powers, and the Harbingers just assigned a name and the concept of fate to it after it happened enough times.)
Mmm, I think you can lower those expectations, I don't think it's a spoiler to say that concept is very safely a part of Harbinger mythology rather than of real history.
This a world with confirmed magic. Confirmed fate? Not so much. 😅
Why DID Amy not tell Skinner about almost going to confess her crush to Adam in episode 4? Was she just really embarrassed?
Embarrassment is a part of it, sure, but only a part of it. A lot of it is about controlling the narrative about the relationship that exists between her and Adam.
The fact that they went on a date together is part of the public record, and must be dispensed with. So she does that - or tries to anyway. And if the story of that day stops after the date, that's kind of a clean break for that thread. They had a thing, they went on a date, it went badly, they got it out of their system, that's all done now.
If the story includes the fact that Amy realized she had feelings for Adam after that first date, that invites a lot of thornier questions that muddle the waters, especially from the point of view of motivations and who did what for who.

The standard, excellent advice for writing audiodrama is to watch out for scope creep - it's easy to accidentally make something unbelievably complex to record and produce if you're not careful, like putting too many unnecessary one-off characters into an episode, or making plot-necessary complex musical sequences, or making long action portions with monsters and collapsing buildings and the like. These are all avoidable, and they all contribute to a project becoming exponentially more difficult to make.
