What we ate- Childhood- vegetarian phase
I think we had ours in a bowl with a fat piece of hot cornbread and extra everything including sour cream. I think too- our bowls were heated in the oven. Did my mother learn this from Julia Child? The Galloping Gourmet? I’m not sure.

Cornbread of my childhood.
Mollie Katzen enchiladas
1/2 C cream cheese -1/2 lb grated jack cheese -1/2 C chopped green olives -1/2 C chopped black olives -1 small minced bell pepper 1/3 C raisins (kill the raisins) 2 minced scallions few dashes of cayenne Combine in a bowl and mix well
Red Sauce 5 med diced red tomatoes 1 lg red bell pepper minced 1 tsp salt 5 minced cloves of garlic 1/2 tsp rushed red pepper 1/2 tsp ground cumin 1) Place all ingredients in a saucepan and bring to a boil. Lower heat, partially cover, and simmer for about 15 min. 2)You can leave it chunky or puree in a food processor or blender.
